I love when recipes touch upon several taste sensations, especially contrasting ones. It’s even better when said flavors are in a cookie!
Oatmeal Cranberry White Chocolate Chunk Cookies
(Found on the back of Ocean Spray Craisins package)
2/3 cup butter
2/3 cup brown sugar
2 large eggs
1-1/2 cups old-fashioned rolled oats
1-1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 6-ounce package Ocean Spray Craisins Sweetened Dried Cranberries
2/3 cup white chocolate chunks or chips
- Preheat oven to 375F. Using an electric mixer, beat butter and sugar together in a medium mixing bowl until light and fluffy. Add eggs, mixing well. Combine oats, flour, baking soda and salt in a separate mixing bowl. Add to butter mixture in several additions, mixing well after each addition. Stir in sweetened dried cranberries and white chocolate chips. Drop by rounded teaspoonfuls onto ungreased cookie sheets. Bake for 10-12 minutes or until golden brown. Cool on wire rack. Makes approximately 2-1/2 dozen (30) cookies.
Calories: 120 each (approx.)
Note: I baked mine on 350F for 8 minutes to keep them super soft, and I omitted the salt. If you want a crisper cookie, bake at the recommended temperature for full 12 minutes.
They came out excellent! I normally don’t like white chocolate on its own, but I like it in baked goodies. This recipe would be perfect for Christmas cookies. In fact, that’s what I instantly thought of when I bit into one.
Baking drained most of my creativity in the kitchen for the day, so I kept things simple for lunch + dinner. I tried a new Chobani flavor with lunch: Strawberry banana!
- 3 slices Tofurky (60 cal) on 2 slices Food for Life Genesis 1:29 sprouted grain seedy bread (160 cal) with romaine lettuce leaves (5 cal) and no salt added mustard (10 cal)
- 1 container Chobani 2% strawberry banana Greek yogurt (160 cal) topped with 1/2 medium banana (55 cal) and 7 almonds (50 cal)
Loved the strawberry banana yogurt!! So tasty and creamy. I also enjoyed my Tofurky sandwich, but could barely taste the Tofurky. 3 very thin slices doesn’t amount to much taste or texture, but I <3 it anyway. hehe
I see the sun peeking out, I might go for a walk outside today. I gave myself a nasty blister on the bottom of my foot doing my obstacle course yesterday. It feels better today, but I should probably stick to something easier on the tootsies, like recumbent bike. I need more equipment, like a row machine! That would be awesome, and our anniversary is next week. Nothing says romance like a sweat generator. hahaha
