I look forward to my Wednesday “cheat” meal, it’s a nice break from this inconvenient diet that I’ve taken on this month.
Why is it inconvenient? Well, when you’re hungry and don’t want to eat meat 3 times a day or half a dozen eggs a day, options are fairly limited in the quick-and-easy category. It’s simple to just grab some nuts, seeds, and veggies, but that makes me feel like I am snacking, not enjoying a meal. That can get extremely boring if done too often.
I’m not used to having to think about what I can’t eat in a house full of foods that I typically eat, so the decision-making process consumes more time than I’d like it to. I plan my menus ahead of time, but when life interferes with idealistic goals I find myself too hungry and too impatient to cook an elaborate grain-free meal. Obviously it’s not like this every day, but I have noticed that it’s much more inconvenient than an all-inclusive diet. I would adjust and become more efficient at it eventually, but that’s probably not going to happen in just a few weeks. The semi-raw diet experiment was actually a bit easier because I eliminated almost everything and most preparation methods and that left very little to think about! LOL
Going grain and legume free the majority of the time is challenging, but that doesn’t mean that it’s without its tasty eats. I’m crazy about lots of the things I’ve been eating! I think I have replaced much of my carbohydrate intake with fats; olive oil, cheese, eggs, and avocado in one dish? Yes, please!
Garlic Spinach and Egg Scramble with Laughing Cow Light Cheese, Tomato, and Avocado
Fresh chunks of SpongeBob SquarePants’ house pineapple
Several splashed of Cholula hot sauce
- 4 cups fresh baby spinach cooked in 1 TBSP EVOO + minced garlic, then 1 egg + 1/4 cup egg whites added in and scrambled. In between the eggs + spinach is a Laughing Cow Light Cheese wedge. Topped with diced plum tomato, avocado, and Cholula hot sauce with a side of fresh pineapple
That was my brunch; big enough to keep me going for awhile, but small enough to be hungry by the time we went out to dinner. We decided on Cosimo’s for dinner. It’s close by (if by close you mean 20 miles) and full of carby goodness.
They brought out the bread basket of doom right away!
I had 3 small pieces: 2 of the focaccia and one regular Italian bread.
I ordered the eggplant parmesan which came with penne pasta.
I ate about half of the eggplant and about 1/4 cup of the pasta…
I was nearly full from the bread + water, so I pushed most of the mountain of cheese on the eggplant to the side. I brought the rest of it home for my mom, she snubbed the pasta, though. It was slightly underdone, even if they were aiming for al dente. The eggplant parm was delicious, though. I sort of regretted filling up on the bread and water, I felt way too full after the eggplant. We were satisfied with our meals and the service, so I’d say it was an enjoyable “cheat” meal in the company of my favorite CEO.
Wednesday’s Almost Grain Free Menu (plus cheat meal)
- One medium banana
- Spinach + egg scramble with Laughing Cow Light cheese wedge, tomatoes, avocado, Cholula hot sauce
- Fresh pineapple chunks
- 3 pieces of Cosimo’s bread basket with EVOO + balsamic vinegar
- Eggplant parmesan and penne pasta at Cosimo’s
- Piece of 72% dark chocolate Endangered Species bar
- Slice of Alpine Lace Swiss cheese
- Honeycrisp apple
