Hey, party people! Sorry I’ve been MIA most of the week, I’ve been crazy busy getting ready for our trip. We’re leaving in less than 12 hours and I’m STILL not finished packing!! I wanted to check in (procrastinate) before we take off. I have done next to NO cooking all week, we have eaten out every single day! And I won’t be cooking for another week, HA! lol I’ve been so busy that I actually dropped another pound, so it’s all cool. Oh, and I lost the other 2 lbs that I gained back after going off of the almost grain-free diet. So: I’ve kept off that weight for almost a month, plus lost another. Yay! I’m sure I’ll do some damage when we’re in Vegas, though!
I didn’t take many food pics this week because we mainly grabbed a sandwich here and there while we were out, then I’d make almond butter + fruit spread for dinner. Thrilling, right?
Wednesday we had dinner with my cousin, Tricia, at Avocado Restaurant in Cornwall. Ironically, I didn’t have any avocado with my meal. Boo!
I went with the Carnitas
Pork tenderloin tacos. I requested flour tortillas instead of corn. I’m not a big fan of corn tortillas, I only like them once in awhile.
I ate all 3 of my tacos, none of the beans + rice, though. The tacos were ¡muy delicioso! I only had 4 corn chips + salsa while we waited for our food. So glad we didn’t order an appetizer, too much food. YUM
Ok, I have to go finish packing now and get some sleep. I will be blogging from Vegas, so I’ll check in when we get to our hotel. Nite!
