Pizza with Pizazz

Whenever we go to Deising’s Bakery in Kingston, I usually pick up some of their frozen pizza dough balls. They make an amazing crust and cost only .99 cents each!

I’ve had two of them in the freezer since my birthday, so I decided to defrost them and make pizza, pizza on Sunday instead of our usual Sunday pasta. Anything Italian will do, really. We’re not fussy. ;) Starchy carbs + sauce + cheese = we’re down for it!

We made one cheese (borrrring!) and one with sweet basil Italian sausage, caramelized onions, roasted garlic tomato paste, and goat cheese (the one with pizazz!! :lol: )

This beauty took some time, but she was worth it and more! You can use any pizza dough recipe with this, store-bought dough balls would work perfectly.

Ingredients needed: Pizza dough (8 servings), tomato paste, two heads garlic, olive oil, three onions, sausage of choice, 4oz goat cheese

Step One:

Roast two heads garlic – Cut tips of garlic head off just enough to expose cloves; rub entire head with extra virgin olive oil; wrap in foil, and roast on 425F degrees for about 30-40 minutes or until garlic is soft and caramelized.

Step Two:

Cook sausage – Slice or dice up sausage into bite sized pieces. Cook thoroughly, set cooked sausage aside, and leave pan on for onions in step three.

Step Three:

Caramelize three small yellow onions – Peel and slice 3 small-medium yellow onions. In the frying pan used to cook sausage, add in 1 TBSP butter and 1 TBSP EVOO; add in onions and let cook down until browned and soft. I put a lid over mine to keep some of the moisture in. They take quite awhile to cook down.

Step Four:

Make roasted tomato paste – Mix 6oz tomato paste with roasted garlic

Step Five:

Preheat oven and roll your dough out – Preheat oven to 500-550F degrees or as high as your oven goes. I rolled my dough into an oval-ish shape on a baking sheet lined with nonstick foil.

Step Six:

Assemble – On rolled out dough, spread roasted garlic tomato paste evenly across. Add on caramelized onions, then sausage, and finally the goat cheese. I used 4oz of goat cheese and put small dollops randomly all over. You can use more or less goat cheese, or another cheese entirely.

Step Seven:

Cook it – Place in preheated oven. Cooking times will vary. When dough rises and is browned on the bottom, it’s done. Be careful not to overcook it on high temps.

Makes 8 servings

Simple bowl of romaine lettuce drizzled with EVOO + red wine vinegar on the side.

This pizza was perfect!! Loved every bite of it. The tangy goat cheese combined with the sweet onions and roasted garlic tomato paste on the crisp crust was out of this world good. YUM x 9,000,000,000,000,000,000,000,010

I’ve have a bad craving for pizza and this post only made it worst! Looks so good. *drools* ;)

It goes to show that we don’t have to cut out any ‘junk food’, just make it healthier. The best way to find a healthy alternative is to make it yourself.

The only thing I don’t like when I make my own pizza is that the base is so flat. I prefer the bouncy kind with some crust.
