Vegan for Lunch, Vegetarian for Dinner

Plants rule!

I made a pound of kidney beans a few days ago and have been enjoying the convenience of having a large tub of cooked beans ready in the fridge anytime my little heart desires. Thursday, I made a fluffy vegan salad for lunch with a generous serving of kidney beans on top. It was awesome.

Raw kale, romaine, kidney beans, raisins, bell peppers, and red onion salad

First, I massaged my raw kale in extra virgin avocado oil, red wine vinegar, a few splashes of balsamic vinegar, garlic powder, and AlsoSalt. Then, I piled on the romaine lettuce, beans, raisins, bell peppers, and red onion and drizzled the remaining dressing from the massaged kale over the rest of the salad. Totally delicious, and filllllllllllling. OMG, so so SO filling! Yummy.

We decided to order Greek takeout for dinner shortly after I decided I didn’t feel like cooking. :lol: We called our favorite Greek restaurant in Monticello: Yanni’s Gyro Express!!

Dustin had the Opa! platter, which came with a ton of food, including a small Greek salad that he gave to me. <3 Unfortunately, I don’t like stuffed grape leaves and it made the whole salad taste like it. :) I know, I know, I’m probably the only person who loves Mediterranean cuisine that doesn’t like stuffed grape leaves. They taste too lemony and floral to me, so I usually order Greek salads without them if I can.

I ordered the GOAT CHEESE, PORTABELLO, and tomato panini with orzo salad.

The orzo salad was AMAZING! Very buttery and flavorful despite looking somewhat plain. Loved it!

The panini was fabulous, too. LOVED the marinaded portabello mushrooms and creamy goat cheese. YUM!

We also ordered a sampling platter of appetizers: hummus, zucchini sticks, and pita wedges with taziki.

I had one of each. Toooooo much food!

Never got around to the Greek salad that Dustin donated to me. Well, actually I did eat the olives off of it. I can’t resist olives. hehe

I ate half of my panini and all of the orzo. They make excellent Greek food. It’s nice and fresh, yet reasonably priced. My kind of place! Next time I might go with just the orzo, it’s that good. :)

To reiterate: PLANTS RULE! (So does cheese) :mrgreen:

Hey Jen!! We own Yanni’s Gyro Express Cafe & are soooo happy with all of your comments on our food!! We look forward to seeing you again, sorry you don’t care for the grape leaves, ask for extra olives instead; tell the girls Paula said it’s ok! LOL
