Two Eggs in a Pod

I bought these Poach Pods a long, long time ago and finally tried them out yesterday.

They’re made of nonstick silicone, so I didn’t use any oil, but this guy did. He also shows you how to use them.

Do you ever buy stuff and then not use it for a while? I do that all. the. time. I think I’m just a closet hoarder, lol. I’m glad I finally used these, they are really neat! And the eggs didn’t stick without oil, they popped right out! :)

Another item I bought some time ago at Nature’s Pantry:

It has pretty legit  nutritional facts for something that doesn’t even need refrigeration until after you open it!

What do you get when you poach eggs in pods and have precooked bacon? A bacon, egg, and goat cheese sandwich of course!

We went to (Monticello) Shop Rite early in the morning, around 9:00am, so I could get some fresh produce. Why do my fresh produce runs almost always turn into half a cart full of stuff? :roll: They had fresh baked hard rolls in the bakery, so I plotted my feast while I shopped. :twisted: I was pretty disciplined for still being in my fasting mode! I knew I was about to have yumminess when we got home, though. And yumminess I had!

The egg, bacon, and goat cheese sandwich was only half of my feast. The other half consisted of a glorious Buffalo chicken salad with blue cheese:

I had two beds of lettuce in this; one massaged kale and the other mixed lettuces. I’m a leafy greens fiend! :lol:

Buffalo Chicken Salad with Blue Cheese

  • 3-4 cups raw massaged kale (1 TBSP olive oil, 2-3 TBSP red wine vinegar, AlsoSalt)
  • ~2 cups mixed lettuce
  • Chicken tenders grilled on George Foreman grill, chopped and tossed in Dave’s Gourmet hot sauce
  • 1 oz  Alouette blue cheese crumbles (100 cal)
  • 2 TBSP Bolthouse Farms blue cheese yogurt dressing (50 cal)

I really can’t decide which was better; the egg + bacon sandwich or the Buffalo chicken salad! They were both absolutely DELICIOUS, and I ate every last bite. :mrgreen:

I did more intermittent fasting than I had planned for between yesterday and the day before. We have crazy hours, but we’re trying to adjust our schedule to wake by 4:00-5:00am, so I fasted something like 9 hours, then had two chip balls, and then fasted another 16 hours after that. It wasn’t that bad, and probably the last time I’ll have so many extra hours for a while. Intermittent fasting is fun! I’m still digging it! :)

Intermittent Fasting Menu: 16-hour fast

  • Glass of water with squeeze of lemon juice + Truvia
  • 2 cups tea with NuNaturals liquid stevia
  • Lots of water throughout the day
  • ~1 oz Jarlsberg Swiss cheese
  • 4 macadamia nuts
  • Bacon, egg, and goat cheese sandwich on a hard roll (2 slices bacon, 2 poached eggs, about an ounce of goat cheese)
  • Buffalo chicken salad with EVOO + red wine vinegar raw massaged kale, mixed lettuces, 4 grilled chicken tenders with Dave’s Gourmet hot sauce, 1oz Alouette blue cheese crumbles, and 2 TBSP Bolthouse Farms yogurt blue cheese dressing
  • 2 chocolate chip macadamia nut date oat balls
  • 2 oz muenster cheese
  • Can of diet Dr. Pepper
  • Hard roll with ~1/2 cup  leftover white bean + turkey chili + yellow mustard

Approx. 1800-1900 cals


Can’t wait for my feast later this morning!! Shop Rite had my favorite loaves of roasted garlic ciabatta. Good things to come! :)

Question: Do you like poached eggs? I think they’re the perfect way to have a runny yolk without having to add calories from frying.

that salad looks good!!! I’m ready to dive through the computer : P believe it or not, I’ve never had a poached egg! those pods are freakin adorable though!

Yeah, I’ve done that with buying stuff. But when you discover it later, it’s like a new adventure. :-)

I bought those poach pods for hubby for Xmas, they’re so cool & make perfect eggs! I’m having a hard time wrapping my brain around 1,900 calories during a fast, seems like too much for a period of fasting? Guess I need to educate myself more about it….

J, you don’t consume calories until you’re done fasting with IF. If you are having calories during a fast, then it’s not a fast. :lol: With IF you are in a fasting state for 16-20 or more hours. I do 16-20, some people do a full 24 or 36. That’s a bit much on a daily basis!

Another vote for poached eggs here. Those pods look like a fun way to cook eggs without the extra fat and hassle, as you mention. Thanks, also, for including Jarlsberg Lite in your menu.
