Peace Out Jack Frost, What Up Springtime!

by j3nn on March 20, 2011

Even though nearly nothing is in bloom here in the Catskills, I still love when one season ends and another begins. But what is there to love about a transitional season that still has a great chance of snow and sleet, muddy kitty cat feet trampling into the house, and allergies galore?

Well, springtime ushers in opening day for NY Yankees baseball!

I’m not a huge sports fan, but I am a huge NY Yankees fan. Yet not really a fan of all baseball teams, just the NY Yankees. And no, it’s not just because they win a lot, but because it’s family tradition, win or lose. A part of childhood summers that still bring a smile to my face decades later. Remember: I grew up in the 80s when they weren’t winning very much, lol. Biased New Yorker? Yes, yes indeed. ;)

But springtime isn’t all balls and butt pats. It’s also when asparagus is in season!

Asparagus

One of my favorite green veggies! <3

Ooooh, look what else I found in that asparagus post: Dark Chocolate Chambord Cupcakes!!! :o

Chambord chocolate cupcakes

Oh. my. gawd. Those were amazzzzzzzzzzzzing!

It’s also fresh strawberry season… drooooooooooooooool….

Greek yogurt with fresh strawberries and slivered almonds. Maybe a drizzle of honey or agave? Mmm!

Shrimp, avocado, and strawberry salad. Phenomenal combo. MUST try!

I’m also looking forward to perfect walking weather, longer days, opening the windows in the house and the car, and adorable little fawns in our backyard.

And of course, I’m definitely looking forward to chocolates the Easter Bunny brings!!

What are you looking forward to this spring?

The fawns are so adorable! But my favorite part of this post is seeing the big Reese’s eggs in those easter baskets. Those are the best!

I’m just looking forward to going outside without a jacket on – being able to take walks/run outside with freezing my ass off!

Oh my goodness I am IN LOVE with your blog – and I’m so excited to read more :)

I’m super excited that it’s finally Spring! Summer awaits now. Easter baskets are so cute and the little animals – especially bunnies. I love seeing them frolicking in my yard, haha.

Enjoy your weekend and the weather + good eats!

Wisconsin is definitely lacking in any bloom, but I agree that the idea of Spring just perks everything up! :) The warm weather is #1 on my list!

Loving your use of strawberries… salads and yogurts mixes = fantastic!

These dark chocolate cupcakes look awesome! Just a question, did you use beetroot in them? Theres a red tinge to them and I wondered if they were like the red velvet cupcakes you can buy near where I live.

And I’d like to say hello as well, I just found your blog and I hope to keep returning to ir :)

No, just the tinge of redness that chocolate sometimes has. Maybe the butter brings it out? lol

Spring has arrived here as well! Or, at least I thought so. We’ve had a few gorgeous days and the weekend was warm and sunny. But, the weather man is calling for 15 cm of snow tonight! So, we have a ways to go yet!

I am looking forward to basically moving into our local parks for festival season. Bring on the $10 beers and funnel cakes. Errr… I mean the hydration stations and fresh fruit. ;)

I love asparagus way too much so I’m definitely excited about that as well! This weather is making me seriously happy because I can drive with the windows down, open the windows in the house, take walks with my husband & pup, see all the beautiful flowers & trees blooming and not have to wear a coat! haha :]

Those are some wonderful Spring awakenings.
I’m looking forward to running my first Boston Marathon THEN, and even MORE
exciting, looking forward to being a spectator at my hubby’s Triathlon events. I’m more
excited about those Tri’s than my running.

Sure sign of spring is when all the snow is melted and we stop getting 30 degree temps – which won’t happen this week – so over winter!

It poured rain all day yesterday and I had planned on doing a whole chicken on my Weber – just not the same flavor from the oven! :(

I can’t wait for the warmer temps!
