Hola, mi amigos! What’s good in your ‘hood? I spent the day practicing food photography, eating, blogging, eating, and doing mundane tasks. In other words, the same things as the day before, lol. It’s rainy and chilly again. I knew the 6 hours of warmth we experienced over the weekend wouldn’t last, and that’s ok. I’m not ready to jump into hot weather; I enjoy the transitional seasons.
I also enjoy when recipes just sort of come together. I planned to make tacos, but eventually decided to make nachos. Partly out of laziness, partly out of having a fresh bag of tortilla chips. It just made sense.
Shredded Pork Nachos with Pinto Beans
Shredded Pork Nachos with Pinto Beans
Ingredients:
- One pork tenderloin
- ~1/2 cup water
- 4 garlic cloves
- Chili powder to taste
- Garlic powder to taste
- Cumin to taste
- Salt, optional, to taste
- Black pepper to taste
- Cayenne pepper to taste
- 1/2 large onion, diced
- 2 TBSP cooking oil
- 1 (14oz) can pinto beans, drained (~1.5 cups cooked beans)
- 4oz shredded cheddar cheese
- Diced tomatoes
- Sour cream or Greek yogurt, optional topping
Method:
- Cut pork tenderloin into 1 inch slices; add to crock pot with water and garlic (salt, if desired). Cook thoroughly; when cooked, shred with fork.
- In a skillet, add in cooking oil and diced onion. Cook until onion is softened, add in pork with all the seasonings and salt. Stir well, then add in (drained) beans and mix. Heat until warmed throughout.
- Make a layer of tortilla chips on a plate; add layer of pork and beans, then cheddar cheese; repeat for as many layers as you’d like. Top with tomatoes and other toppings, such as sour cream, guacamole, jalapeno peppers, and black olives.
Makes 4-6 servings
OMG, so delicious! We used a container of Siggi’s nonfat plain yogurt as our sour cream, but I think I would have preferred guac or fresh avocado. I didn’t have any.
Oh well, next time! Yummy.
If you don’t do pork, you can always try rawchos (raw nachos)!
These are RAWesome! I have to make them soon.
Time to go brush my teeth and wind down. I had a few too many teacakes today, lol.

I love homemade nachos – black beans mixed with salsa and topped with some cheese….mmmmm!
OMG That looks amazing!!! I’ve never made pulled pork before but the crock pot seems the way to go. Maybe I should buy a crockpot…
Can you believe we moved and found a place but our household goods are going to take 3 weeks to get here!! I have no pots, no pans, no toaster, no knives, no plates nada!! A crockpot could be useful in this time of need. LOL
The nachos looks soooo good, I swear!
