The Easter bunny visited us and filled our baskets with goodies!
Yay, Easter bunny!!
After eating candy for breakfast, I went on an hour-long hilly walk with mom. We covered about 3 miles or so. The hills were brutal! And the bugs took advantage of my huffy-puffiness when we got to a steep one. I think I swallowed a dozen of them.
I’m glad the weather is finally nice enough to walk in, other than the rain. If there wasn’t mud on the dirt trail where the pavement ends, I would have done a full 7-mile hike, but the hilly walk was a good start for the season. Our subdivision doesn’t have sidewalks or very much level ground; there’s basically two terrains: steep and steeper, lol. I guess it’s one of the advantage of living in the mountains. Although, it’s a small mountain range. Once you get used to the hills they aren’t very challenging. It takes me 5-6 days to get used to them, but when you haven’t walked them in a few months, it’s easy to be challenged by them. Incline walking rocks.
Then, I showered and we went to ShopRite to pick up some fresh bread for dinner. Mom did most of the cooking while I supervised.
And a glorious feast it was!

Skin-on Yukon Gold mashed potatoes
Steamed fresh asparagus with butter
Steamed baby carrots with brown sugar and butter
Golden corn with butter
Crusty and pillowy-soft Italian bread
Dessert
Homemade pineapple cheesecake with graham cracker crust
Everything was FABULOUS! I found myself too stuffed, once again, for dessert. So we waited several hours before we dove into the cheesecake, but I didn’t take a pic of it… sorry!
Despite my indulgences at Mandi’s birthday party and Easter candy and Peeps S’mores and Hot chocolate with Peeps marshmallows, I actually lost a pound this week.
I attribute it to random bouts of intermittent fasting and keeping busy. Our wedding anniversary is in 10 days, so this week I’m going to be extra conscious of my choices being we’re most likely going to NYC for the day and I’d like to go not feeling like a swimming floatie. I’d like to lose 2 or 3 lbs before then, which should not be hard if I stay out of the Easter basket. I think I’ll keep transferring my candy to Dustin’s basket, LOL. I already put in 2 peanut butter eggs and a miniature Cadbury egg.
But we also have a surplus of leftover candy that didn’t go in baskets. Gah! I plan to bake with them and find some others to share with, haha.
It’s dark and gloomy outside today. That and the sugar coma made it hard to wake up today. I ended up sleeping until 9:00am when I was supposed to be up by 5:00am. Good thing I don’t have to leave the house to go to work, huh! I’d be fired within a week.
Off time find some sunshine… even if synthetic.
