I am beginning to love leftovers. Food. Already cooked. Perfect.
Throw it on some fresh veggies and you’ve got lunch!
Leftovers Salad
Aren’t these roasted purple potatoes GORGEOUS?!
Purple potatoes are very high in antioxidants, but taste just like white or red potatoes.
Another super food: Fresh strawberries!
Drizzled with a little agave nectar.
- Bed of mixed lettuces
- Handful of raw shredded cabbage
- Kocker pickle slices
- Shredded Kerrygold Swiss cheese
- Leftover brown sugar-glazed ham from Easter dinner
- Olives from olive bar + Lindsay low sodium black olives
- Leftover roasted purple potatoes
- Drizzle of extra virgin olive oil + red wine vinegar + mustard + honey
- Black pepper + light sprinkle of low sodium sea salt
Deeeeeeeeeelish!
It’s been a busy post-holiday Monday even though I woke up pretty late. I’m glad the day is over. Going to watch whatever Tivo is holding captive. Nite nite!

I loooove leftovers!! Especially big salads made up of just about every last bit in the fridge
I know it’s not everybody’s thing, but I definitely rely on leftovers during the work week.
Those purple potatoes are jumping out of my screen – so pretty!
I would eat leftovers every day if I could. But it wouldn’t work. Because I need to cook something to get those leftovers…

We will be eating leftovers for the next few days — today I took toasted english muffins, topped them with leftover sweet potato casserole and shredded turkey on top. It was so good!
I love leftovers especially re-creating them into something new

Those prices are completely unheard of here, even when they’re in season! I’m not sure I could even grow them that cheaply. You should make a strawberry avocado salad… it would be gorg!

I usually throw leftovers into a stir-fry or a stew – I definitely should add them to salads too! Those potatoes look delicious, and I’m sure they have more antioxidants than “regular” potatoes!
Agreed on leftovers, simple, healthy and cheap.
The potatoes are gorgeous, wow! I through leftovers on salad a lot, steamed veggies, kale chip crumbs, raw pates, sprouts and whatever else I can find.

Mmm and strawberries. I love that you used the word superfood heheh. I’ve been trying to incorporate them more into my diet, since I’ve been using these skincare products that are based on known superfoods and how they benefit our skin. I swear since I’ve changed from fuji to granny smith apples my skin has been a lot better. Apparently green apples have something in them that the other apples don’t that helps with blemishes. Okay I’m getting sidetracked lol! Have a wonderful day though!

I love adding leftovers to a salad! I especially am a fan of a slightly warm item on a cold salad – I love the differences in temperatures.
Craisins are one of my other favorite salad toppers – edamame too.
