My Bud The Spud

I’ve been eating a lot of potatoes lately. They’re so tasty… and cheap! One of my favorite ways to eat them is boiled and then LOADED with all sorts of yumminess. Tonight’s ‘tato:

Loaded Mexican Yukon Gold

Simple side salad of romaine lettuce and a pickle. Random, but it popped out at me. That and I didn’t have a fresh cucumber. Sad smile My mom thinks I eat too much salad and that’s what my tummy doesn’t like. I think (hope) she’s nuts, LOL. Dustin thinks the same thing, but what does he know? His plate is missing anything green 96.4% of the time. So in comparison, yes, maybe I do. Smile with tongue out

Toppings:

  • Steamed broccoli + cauliflower
  • Reduced fat Kerrygold cheddar cheese
  • Pace picante sent to me by Pace and Foodbuzz
  • Dollop of Fage full-fat Greek yogurt
  • Lindsay low sodium black olives
  • Jalapeno slices
  • Few splashes of Cholula hot sauce

Mmmm… mmm!! SO GOOOOOOD! And filling! OMG, this with 2 glasses of water + the side salad…whoa… STUFFED! Don't tell anyone smile This will likely be my only meal for today, other than a handful of M&Ms. Rolling on the floor laughing  

It was 80 degrees out today! Warm, humid weather and I do not mix. But being I was already feeling clammy, I went full charge into the feeling and did 7.5 varied-resistance-miles on my recumbent bike, which I need a new one of! Both pulse sensors = broken and falling off. :roll: I think I abused it. Embarrassed smile I was going to go for a walk too but decided to just take a cold shower.

I’m going to go to sleep early tonight. I’ve been deviating from my schedule too much and I’d like to change that. So, nite nite!

Question: What are your favorite potato toppings? Have you ever had a boiled potato or do you prefer roasted? I like boiled because they come out soft, but no cooking oils needed. Nice and simple!

Hmm… I hope the greens aren’t the source of troubles. I cannot see how they would be bad? fiber and cleaning out and all?

I prefer roasted potatoes, although my parents always made boiled, so I’m happy with either prep method!

Wow that potato looks intense!!

Can you really eat too much salad? I feel like salads are delicious. I hope they don’t give you tummy aches though!

IMO, no, you can never eat too much salad! :) But I’m sure there’s a point where it’s probably a wee bit much, lol. I don’t think I’m anywhere near that, though! haha

I love vegetarian chili on my Idaho potatoes – but on sweet potatoes, I love baked beans and coleslaw! It is probably one of my top ten meals!

heh, I love pickles on my salad. I thought it was odd when I first saw my mom doing it, but now I love it!
The potato looks delicious – now I’m thinking I ought to have a stuffed sweet potato for dinner. Except I know I’ll probably “lazy-out” of that and just roast it whole :P

That potato looks so good. I grew up eating boiled potatoes but we only put butter on them. It never occurred to me to put anything else on them until I got older. I recently tried taco meat and toppings on a sweet potato. That was delicious.
