Cinco de Tres

I’m getting a head start on Cinco De Mayo with Mexican-inspired deliciousness. Because it’s never too early to appreciate all the yumminess that Mexico has introduced us to, right?

¡Chicken Fiesta Tacos!

I slow-cooked a whole chicken in the crock pot today, so dinner came together in like 6 minutes. Yay for fast dinners! Open-mouthed smile

When the chicken was cooked, I shredded the breast meat with a fork, added it to a frying pan with some EVOO, chili powder, cumin, garlic powder, and a dash of cayenne pepper and stirred it all together for a few minutes on low heat.

I went al fresco tonight: No cheese! And I didn’t miss it one bit!!

On my soft-shell chicken tacos:

  • Fresh perfectly ripened avocado slices (!!)
  • Fresh diced plum tomato
  • Fresh cilantro
  • Squeeze of fresh lime juice

SO GOOD! I went to Shop Rite this afternoon to pick up the fresh produce and was so happy that the cilantro and avocados looked good. I lucked out, it can be hit or miss at Shop Rite in Monticello, lol. Everything tasted amazing. I think cheese-free and cilantro is my new favorite way to enjoy tacos. More authentic, less Taco Bellesque, lol.

I didn’t get my hair done today. We had a late start. Sad smile I’m going to try to get in tomorrow is my hairdresser is available. Thursday, it’s our anniversary, so we’ll be off but I’ll be blogging. We have a fun day planned… can’t wait!! Open-mouthed smile

Are you doing anything for Cinco de Mayo? It really only became of interest to me after it became our anniversary; Cinco de Mayo sounds way cooler than anniversary, doesn’t it? lol

Long day. I’m getting ready to go rest my weary eyes. They’ve been irritated all day. Allergies, I’m guessing. Blek. Nite nite!

I had quesadillas in honor of Cinco de Mayo…my first quesadilla!

I’m sorry, but I just HAVE to have cheese. Ahh how can you leave that out? though, I have to admit it looks super tasty…:D

Ahh Cinco de Mayo! I miss tacos! Yours look AMAZINGLY good! Actually what I really miss are tortillas which I grew up eating. Sad to not have any here. I’ll be home soon enough though :) I’ll have to do a Cinco de Junio celebration instead!

Mmmm, love me some great Mexican food! Looks delicious! Not sure what my plans are but I’m sure it will involve lots of guac ;)
