Happy Mother’s Day to all the mothers out there! My little 4’10” (or 9”?) mother likes to keep celebrations low-key. Dinner and done! Nothing fancy, no restaurants—she’s pretty straight and to the point, lol. Not that there’s anything wrong with that. It’s sort of nice to take it easy for a change. We just celebrated Easter not-so-long ago, and our anniversary was the other day, and my grandmother’s and cousin’s birthday in a few weeks, and then Dustin’s birthday is in the beginning of June. Special occasions are too frequent to be special anymore, LOL. Anyone else get that feeling? Maybe I’m just a Scrooge year-round. haha
Mother’s Day Menu:
- Baked ziti (rigatoni)
- Tossed salad
- Roasted garlic bread with butter
- Ice cream for dessert
The basil garnish is from my AeroGarden!!
Adding lemon and lime slices to my water is my new favorite drink.
Everything was zeeeelicious! My mom is kind of cheese-happy, and even though I am crazy about cheese, I had to push aside 3/4 of the cheese on there, lol. But it’s her day and she can cheese it up if she wants.
I am going to sleep earlier tonight. Tomorrow: Work, work, work—back on the grind! And back to smaller portions and lower sodium. I ate just about every salty thing under the sun this weekend, so now I’m paying the sodium piper.
Super puffy and feel like crap. I totally deserve it for eating about a cup of sauerkraut and pickles and hot dogs. The serving size for sauerkraut is 2 TBSP/180mg sodium and there’s 16 tablespoons in a cup.
Yeah, baaaaaad Jenn.
Going to do some reading before bed!

Omg, I love baked ziti. I used to get it at this restaurant down the road, but they went out of business, and I haven’t had it since!

Aww, a goat farm sounds awesome! Dustin and I have plans to go to an animal sanctuary sometime this spring and they have goats. I can’t wait!
Sounds like a great celebration. I took my mom to brunch this morning, then out for a little shopping.

popping in to say that the ziti looks great and short women ran in my family, grammy was 4’10″, mom is 5’2 ish. And that’s the side that can COOK!
The side I take after is the tall side that can’t cook. Hopefully i am changing that trend..ha!

I’m not crazy about cheese, but this dish looks REALLY good. I bet that salad was nice and filling. You’ve got a great balance of carbs, protein and fat.

Sounds like a good celebration. I did absolutely nothing this weekend – which was fantastic. The best weekend I’ve had in a long time.

I think the best celebrations are often the low-key ones. I cooked a brunch for my Mom too, nothing fancy, just fun times with her, my Dad and my husband. Have a great day Jenn.
