Salmon Sammie

After all the hardcore cooking and baking I did over the weekend, Monday was all about the quick and easy. My go-to meal is almost always a sandwich or a salad. They are my two favorite foods, after all. So, I defrosted a vacuum-sealed salmon fillet to have on an Udi’s gluten-free hamburger bun. Along with some roasted veggies, dinner came together in about 15 minutes, plus oven time.

Unfortunately, my pictures were not as great as the food itself. The sun had just set compounded by the color scheme of my dish and food and indoor lighting, everything was working against me. I couldn’t get the camera to focus as much as I wanted it to, and of course, lighting issues galore. Blah. Lighting is king with decent photos—when will I learn to eat sooner? hehe

Sandwich: Small wild-caught salmon fillet grilled on my indoor George Foreman grill, atop a bed of Boston lettuce leaves on an Udi’s gluten-free hamburger roll with a mayo + sweet relish sauce.

Roasted veggies: Brussels sprouts, yellow squash, and orange bell pepper tossed in extra virgin olive oil, low-sodium garlic sea salt, and black pepper, roasted on 425 degrees F for about 23 minutes.

Everything was yummmmmmmmmmmmy! The sandwich was SO tasty, I loved it. And of course I loved the roasted veggies; I ate nearly 2/3 of the baking sheet. Boston lettuce is so delicate, a nice change from crunchier lettuce.

It’s been raining all day. A beautiful, perfect spring day, if you ask me. Winking smile A much better alternative to 93 degrees F with 100% humidity. Ugh.

I have oodles of work to do, plus I might go to the store to pick up something fresh for dinner. I went through half of my veggie stash yesterday alone. I go through veggies like crazy! They’re so delish. Smile

On day 9 of being gluten- and cow milk-free, and I’ll be honest: My symptoms are getting worse! My stomach has been so upset for DAYS now. Perhaps it doesn’t like the onslaught of “new” foods, or perhaps I haven’t removed what irritates it, or maybe it’s not even food related. On top of increased tummy woes, my face is experiencing a mild breakout. I’ve been trying to find a doctor that’s a little closer than NYC, but the internet is a mixed bag of nuts. It’s hard to find what I’m looking for because I’m not sure what that is exactly. Ideally, I’d like someone that practices traditional and alternative medicine and has vast knowledge in both. Basically, I want someone as determined and intelligent as Dr. House! hahaha Don’t we all? Smile with tongue out

I need a shower. The pitter-pat of the rain outside my window makes me feel like I’m already in it. I love rain. Red heart   Storm cloud Do you?

Holistic, naturopath, knows when to be a hippy so to speak and knows when not to be, does phone consults. Instrumental in helping me get on the right track w/ food alls/intols. He put me on the path, showed me the road, I did the walking, hiking, and blood sweat and tears but he helped get me even on a road to begin the work.

Worse before better? Not uncommon, at all.

Thank you for the recommendation! He sounds awesome. I’ll check out his web site. And I was just looking for that Y! group today that you sent me, but I can’t find the email! I swear, I have so much trouble finding email once I’ve read it, lol. My Outlook search function is crap.
