Nachos with Vegan Cheez Sauce Recipe–Yes, Mom, It’s Really Vegan!

Vegan cheese never tasted so unbelievably YUMMY!

And I did it all without:

- Fake processed cheez products
- Soy
- Gluten
- Oil or added fats
- Nut milk
- Funky hard-to-find ingredients

Dairy-free cheese? No problem! I got you. Open-mouthed smile

I’m not feeling so great still. Allergies are a nuisance but tolerable at this point, but this relentless nausea is the worst. I’m done with my antibiotics (yay!), but I don’t think my tummy likes Claritin—or any medicine for that matter. I’m going to run all of this by my doc at my follow-up appointment, so for now I’ll just deal with it and manage it as best I can. Thankfully it’s not 600 degrees outside anymore. I’m only slightly exaggerating, lol.

My cooking has been limited, but I’m trying to do a little more each day. Yesterday, I made an amazing batch of vegan cheese (cheez*) sauce with an uber healthful ingredient as the base: cauliflower! It is by far the best non-dairy cheezy sauce I have ever had.

Vegan Cheez Sauce Recipe
(dairy-free, gluten-free, soy-free, grain-free, nut-free)

Ingredients:

Method:

1. Chop cauliflower into smaller pieces; steam until cooked thoroughly; drain

2. In a large pot or bowl, add in nutritional yeast, salt to taste, hummus, vinegar, garlic powder, mustard powder, tumeric, and paprika, then mash cauliflower with large wooden spoon or potato masher while mixing in the other ingredients

3. Add mixed mash to high-speend blender, such as a Vita-Mix, or a food processor with 2 cups of water. (Blender recommended) Blend until smooth

4. Pour mixture into large saucepan; heat on low for 20-30 minutes, stirring often. Salt to taste; add more water for thinner sauce, but taste as you go along so it doesn’t become too weak in flavor.

Makes 10-12 servings

I used it to make my mom vegan nachos for lunch today and she LOVED it!

Mom: What did you put in that cauliflower sauce?

Me: Nutritional yeast, mustard powder, garlic powder, salt… etc.

Mom: Wow, it’s so creamy. It’s really good, I’m surprised.

Me: I know! Rolling on the floor laughing

Vegan Nachos! I tried one… OMG… SO GOOD!

Two layers: Corn chips, cheez sauce, diced tomatoes, and jalapeno peppers. Gluten-free, dairy-free, and 100% vegan. Thumbs up If you know anyone that loves cheese but doesn’t do dairy, share this recipe with them. They’ll be happy.

You can put it on so many things, such as:

  • Pasta
  • Veggies
  • Baked potatoes
  • Nachos
  • Sandwiches
  • Mix with rice + beans
  • Fish, meat, tofu
  • Pretzels and potato chips
  • Use as a dip, get creative and add jalapenos or spinach right into it
  • Use as a salad dressing
  • Make cheezy quinoa <—similar!
  • On tacos
  • In burritos

The possibilities are endless!! I’m looking forward to having some with zucchini today. So delish.

The sauce looks great! I know my friend Katie makes sauce with cauli + nooch in it. I think hers has either garbanzo beans or maybe some hummus in it, too? Can’t remember but she swears by it. Now I see this, and I really have to try using steamed cauli!

YUM!!! I love making dips with cauliflower! I’ve done something very similar to this, without the vinegar though. I’ve also got a great recipe for spinach artichoke dip using the cauliflower nutritional yeast combo as the creamy base. It is so good!

oh i forgot that i wanted to reply to one of your comments on a post waaay back i forgot to reply to. you were wondering if i use a tripod to take pictures or if i was just super stable: I don’t have a tripod and i’ve definitely taken many shaky photos but have mastered the art of stillness..or at least the closest thing to. it can be tricky some mornings when i’m really tired or impatiently hungry, all while trying to get the camera err my hands to hold still! lol
