The Brunch Bug Bit Me–Bacon and Egg Bialy

I love bacon and eggs and egg sandwiches, yet I don’t eat them often. There are some foods that I Mmm Mmm through every bite and vow to start eating them 3 times a day and it never happens. I like breakfast foods, but I hardly ever eat them for breakfast. Today was the exception. Today the thought of an egg and bacon sandwich on a bagel would not leave my mind. So I took a short trip down to the local Trading Post—a small local IGA-type of store where everybody knows your name and your cat’s name and what year your son Johnny is graduating. They didn’t have any fresh bagels at the deli, but they did have bialies. Bialies (bialys?) are bialys basically bagels with no hole in the center. Same texture, same ingredients, same shape, same YUM factor.

At home, I already had everything else I needed: Applegate Farms uncured bacon and grass-and-bug-fed free-range eggs. Done and done.

Summer’s almost over, so my summer sandwich series is coming to an end. But don’t worry, the sandwich series will live on. hehe

Summer Sandwich Series: Breakfast Sandwich!

Yum and yum!

2 scrambled eggs + 2 slices Applegate Farms uncured bacon on a a lightly toasted “everything” bialy with fresh organic strawberries. And water in a coffee cup, of course.

Organic berries don’t hold up as long as regular ones. Sad smile These were on their last leg. I bought a quart of regular strawberries last night. But here in NY they’re way, way out of season anyway, so does it matter much? Nope.

Best breakfast I have had all week. The only breakfast I have had all week, LOL. I’ve been doing intermittent fasting this week, so this was a nice change up. The bialy was so fresh; crusty on the outside, soft and doughy inside. Perfect!

I have a ridiculous amount of housework to get done today. Actually, not all of it today, but this week. Today is just day one of a very long week, err, month. Seriously though, this house is a wreck still. Not dirty, but disorganized and cluttered, which drives me insane. We’ve gotten about 78 deliveries this week, so boxes and STUFF are just everywhere. I need to stop buying stuff so I don’t have to find a place to put it! I need help. Mental help that is, LOL. I don't know smile

Ugh. Off to tackle this. Angry smile

WOW, this does look something tasty!!!

I’ve never heard of this intermittent fasting, but it sounds interesting. Do you feel the difference??

Just by the looks of your bacon and egg, I think I can have it the only breakfast for the entire month. I love bacon though eggs does not really fascinates my taste buds.
