Lettuce Be BFFs

One of the healthiest habits I picked up this year stemmed from Disney World—Epcot, to be exact. What healthful habit could I have possibly have picked up at the sugariest happiest place on Earth?

Lettuce wraps! I can’t seem to get enough of them ever since having this one that blissful day at Epcot.

Of course I haven’t had one quite as good as that one with those amazing Korean flavors and mysterious tasty sauce, but I’ve had some almost-as-yummy ones. Smile One day, someday, I will find a recipe or a restaurant that can reunite me with my precious or something similar. For now, I’ll keep experimenting and noshing on other variations.

I made some impromptu lettuce wrap tacos tonight while I was making corn tortilla tacos for Dustin. I had thinly sliced pork to use, so I made mine with “plain” seasonings (salt + pepper) and Dustin’s with Mexican seasonings. I opted for mild tacos, I guess, lol.

Foodbuzz and Birds Eye sent me some samples of their newest products, Steamfresh Chef’s Favorites, sometime ago. I thought they’d make a nice side dish, especially because they’re so easy to make. All I have to do was put it in the microwave and then open the bag.

Everything should be this easy, and this tasty. Of course I just couldn’t leave well enough alone; I steamed a bag of frozen broccoli too and tossed it with the potatoes + green beans. It was yummy!

Lettuce wrap pork tacos:

  • Thinly sliced + chopped pork loin pan-fried with palm shortening + salt + pepper in (washed + dried) Boston lettuce leaves;
  • Grated salsa jack cheese;
  • Gringo Jack’s Santa Fe green cooking sauce – This stuff is amazing. Not only is it low in sodium (75mg per serving) but the only ingredients are vegetables; tomatillos, jalapeno peppers, onion, etc. I purchased it in Nature’s Pantry but was happy to discover that they have a web site and a restaurant that’s now on my bucket list. Winking smile

You know what would have been fantastic with these? Diced tomato. Didn’t have any.

Fresh cilantro would have been nice too. Didn’t have that either. Sad smile

Fresh avocado slices would have been a yummy addition too. And I had them! Disappointed smile Didn’t feel like starting it just for a few slices though. You know how that is. Be right back

A bit of Greek yogurt or sour cream would be tasty too. But even without all of the bells and whistles, they were still delish and highly recommended. Thumbs up

Lettuce (wraps) tacos are so versatile. You could pretty much throw anything you like in there and it will probably taste good.

It’s snowing here in the Catskills. Annoyed The kitties are restless; they want out, and Caesar doesn’t like when there’s any precipitation outside, so his walks are a struggle. He is from Los Angeles after all. I hear rain is rare and snow is unheard of there. So he’s probably like, WTF? Poor puppy. heh Historically, it almost always snows around or exactly on my birthday! My mom said this has been true since the day I was born. Sigh. (Probably before that too but I’m narcissistic enough to consider Decembers before my birth to be not as amazing.) Do you know how many times my birthday parties were postponed due to snow and poor weather conditions? At least 3 or 4 times throughout my life. Not cool. Not cool at all. It’s bad enough having a birthday 2 weeks before Christmas… have you ever tried competing with Jesus? Yeah, it just ain’t happening, lol. Sigh x2. Eye rolling smile

your site is looking a lil different..gentle tweaks at the header area? I dunno, but it looks ‘lighter & brighter’…I like it. then again my eyes could just be bugging out, entirely possible :)

“Korean flavors and mysterious tasty sauce” — I think you may mean Hoisin Sauce…and it’s like 40% of the RDA for sodium in 1 or 2 tbsp. I love it but cannot!! eat it. Retain water for about 7 years after i have it :)

Yeah, I know hoisin, but this mystery sauce was white. But that probably doesn’t matter; most Asian sauces are very, very high in sodium. And I love them. :( haha We have to figure out why sodium hates us! There has to be something “not right.”

I changed the colors on my header and background awhile ago, made them lighter, but nothing else in awhile. Still working on a new layout but it’s going slow.

I really do <3 lettuce wraps…this is how I eat my burgers……lettuce wraps just make everything taste fresh. I've also done tacos like this…love it. Love you're "pissed off"……def with you.

I keep forgetting about lettuce wraps! They are so simple and to me taste better than using a tortilla. Those look delicious!
