Grain-free Bread (gluten-free)

I made a double batch of modified Chebe grain-free, gluten-free bread rolls last night and they turned out awesoMmmMmmmmmmmme.

Each time I make these rolls, I like them more and more. I even crave them, hence the baking bug that whispered in my ear to make them. If you missed the post from the first time I made them, check it out here for my modified cheese-less, double-sized method.

Chebe bread mix is usually found in the gluten-free section of grocery stores or in “alternative/natural” stores like Whole Foods. Or you can do what I do and buy it on Amazon and not have to go to the store for it. Thumbs up

The texture reminds me of a popover; they’re NOT dry and flaky like they appear. They’re actually soft, chewy, and buttery! I like them so much that if it were the only bread on earth, I’d be happy with that. That speaks volumes about their taste and texture, because you guys know how much I LOVE bread.

The shapes and height they turn out depends on how you shape the dough before you bake them. I like to flatten mine out to make it sandwich-size, much like a sandwich thin, but they puff up, so they’re hollow, yet soft in the middle. Perfect for making fluffy sandwiches, like a Turkey BLAT:

It’s hard to believe they are gluten-free much less grain-free! Manioc flour (tapioca) comes from the root of the cassava tuber and looks a lot like a yam with bark skin:

After patiently waiting for them to cool a bit…

I made an egg-cellent omelet sandwich out of one.

I made a family omelet for everyone to share with:

  • 6 eggs
  • 1 can Trader Joe’s no salt added salmon, drained
  • ~2 cups steamed broccoli courtesy of a steam-in-bag quick nuke
  • 3 slices Applegate Farms Swiss cheese
  • Cooked in Kerrygold butter

Makes 3-4 servings

I topped my portion with a seeded and chopped plum tomato and drizzled a bit of BBQ sauce on it.

I know it sounds like a weird combo, but I assure you that it was SUPER YUMMY!

I might have the same thing again tonight. It’s THAT good! Disappointed smile

I slept awfully last night. Sad smile I kept waking up, and now I’m pretty sluggish today. Blah. I’m heading to bed early tonight. Tomorrow is Super Tuesday and we’re going to a Ron Paul Meet-up organized by meetup.com. I’m excited! Rolling on the floor laughing

Those look so yummy!!! I would have thought from the looks they would have been on the dryer side (which doesn’t bother me)…..I would really like to have that turkey sandwich right now :-)

such an interesting flour, I really want to try it now. I like they are flat shape so its easy to use as sandwich bread! :)

Jenn, these look incredible. I’ve bookmarked to make these myself, but also sent the recipe to a buddy of mine who has celiac and can’t eat any grains. She’ll LOVE these. Hope you have better sleeps, and that all is well.

At 5 large rolls per batch they are 220 calories each. You can try to make 6-8 rolls to cut the cals a little more. :)

It does look light, imagine saying to someone 10 years ago that they would be intersted in grain free bread? It doesnt even sound right!

Are they photo shots you took (in which case it will probably really look like that) or proffessional shots (in which case they probably dont look as good as that when made?!)
