Cilantro-lime Rice -- gluten-free, dairy-free, soy-free, fat-free, and egg-free

Ingredients

  • 6 cups cooked white rice
  • 2oz lime juice (freshly squeezed is best; about half of a large lime)
  • .5 cup fresh cilantro, chopped
  • .5 teaspoon salt (or to taste)

Directions

Step 1
Cook white rice according to directions to yield 6 cups cooked
Step 2
In a large bowl, add in: cooked white rice, lime juice, salt, and cilantro
Step 3
Stir together well so that cilantro is evenly spread throughout
