Hawaiian Baked Beans -- Vegan, gluten-free, grain-free, dairy-free, sweet and savory!
Ingredients
- 2 cans low-sodium pink or pinto beans (drained and rinsed)
- 1 cup ketchup (low-sodium if possible)
- 1 cup crushed pineapple with juice
- .5 large sweet onion (chopped)
- 2 tablespoons cooking oil of choice
- .25 cup black strap molasses
- 1 cup bell pepper strips (frozen and defrosted is recommended!)
- .5 teaspoon salt, optional (or to taste)
- .5 teaspoon black pepper (or to taste)
- 1 clove garlic (minced)
Note
For non-vegetarian version, suggested add-ins: Canadian bacon, bacon, or ham. Or vegetarian "bacon"!

| Preheat oven to 425 degrees F | |

| Preheat nonstick skillet with cooking oil of choice; when oil is hot, add in chopped onion, minced garlic, and bell pepper strips. Cook until onions are softened. | |

| Drain and rinse beans if using canned. Add them to a large bowl with cooked onions, pepper strips, pineapple, ketchup, black strap molasses, salt, and pepper and mix together well. | |

| Transfer bean mixture to large baking dish and place on a baking sheet to avoid spill-overs. Bake on 425 degrees F for 45-50 minutes or until juices bubble and light crust forms around edges. | |
