Spinach & Roasted Garlic Turkey Meatballs -- Paleo, GAPS, SCD, and low-carb
Ingredients
- 1.25lb ground turkey breast
- 2 cups chopped baby spinach
- .5 cup fresh parsley (chopped finely)
- 2 heads roasted garlic (plus 2-3 TBSP extra virgin olive oil to roast with)
- 1 large egg (beaten)
- 1 teaspoon Pink Himalayan salt or salt of choice (or to taste)
- .25 teaspoon black pepper (or to taste)
- 2 tablespoons organic palm shortening (melted) or extra virgin olive oil
Directions

| Preheat oven to 400 degrees F | |
| Step 2 | |
| Cut tops off of heads of garlic in a straight line across; rub extra virgin olive oil all over heads; wrap loosely in foil and place on a baking sheet | |

| Roast garlic on 400 degrees F until caramelized and soft; approx. 30-35 minutes | |
| Step 4 | |
| Leave oven on 400 degrees F and line large baking sheet with nonstick foil for easy cleanup | |

| In a large bowl add in: Ground turkey breast, chopped baby spinach, chopped fresh parsley, beaten egg, melted palm shortening (or olive oil), salt, pepper, and carefully squeeze roasted garlic heads to release the roasted garlic into the bowl | |

| With your hands, mix everything together well until all ingredients are incorporated evenly | |
| Step 7 | |
| Roll balls by hand in uniform sizes to ensure even cooking in the batch; place on nonstick foil-lined (or parchment paper) baking sheet | |

| Bake on 400 degrees F for about 25-30 minutes or until thoroughly cooked throughout | |

I’ve made this deliciousness before but I added two other ingredients to the mix: olives and sun-dried tomatoes! Yum! Beautiful pictures!

Hi there, I was wondering if I can freeze them then defrost and re-heat when I want one. Are they good cold?

Freezing them would work fine! I think they’re good cold, too. I have eaten leftovers without reheating them.
